Equipment

Ingredients

Beef

  • 2.5 - 3.5 lbs Chuck Roast
  • Sea Salt & Black Pepper
  • 1-2 tbsp Olive Oil

Onion Base

  • 4-5 large yellow onions thinly sliced
  • 3-4 garlic cloves minced
  • 2 tbsp grass-fed butter
  • 1 tbsp all purpose flour optional for slight thickening
  • 1 tsp Honey or Sugar optional

Liquid & Seasonings

  • 6 cups Beef Bone Broth Beef Broth or Meat Stock are good options too
  • 1 cup Dry white wine or sub for extra broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp tamari
  • 2-3 sprigs fresh thyme or 1 tsp dried thyme
  • 1 bay leaf

Topping

  • Baguette slices or crusty sourdough bread
  • Gruyère or Swiss Cheese thinly sliced

Instructions

Sear the Chuck Roast

  • Set Pressure Cooker or Instant Pot to sauté (High). Pat beef dry, season heavily with sea salt & fresh cracked black pepper. Sear 3-4 minutes per side until deeply browned. Remove and set aside. Don't rush this step as it helps to build flavor depth.

Caramelize Onions

  • Add your grass-fed butter and sliced onions to your pot. Sauté 12-18 minutes, stirring occasionally. Scrape up browned bits from beef. Add a pinch of salt, and 1 tsp sugar or honey to help browning.

Build the Base

  • Add your minced garlic and cook for 1-2 minutes. Stir in flour (if using), cook 1-2 minutes. Deglaze fully and add the white wine. Cook off white wine. Add broth, Worcestershire, tamari, thyme and bay leaf.
  • Return the Chuck Roast to the pot. Seal lid of Pressure Cooker.

Cooking & Finishing

  • Cook Soup for 60-75 minutes on high pressure (depending on size). Natural release: 15-20 minutes
  • Remove roast, shred with forks. Discard the bay lead, thyme stems and return shredded beef to soup.
  • Serve soup warm with a slice of baguette and Gruyère cheese on top of the bread.
